Benoit Viville, a professional caterer, had noticed that it was possible for the cold chain to be bro¬ken between the time dishes left his kitchen and the time they were actually eaten by the client. If a reception was running late, the dishes on the table could be affected by the ambient.
He wanted to find a way to create a buffet that was easy to transport and set up while keeping the food cooler than in the traditional set-up.The idea of the MAGIC Buffet® was born after 6 years of work and reflection on how to extend the keeping time of his meals and how to integrate this into a transport module.
